Low-Carb Chicken and Broccoli Casserole

Ingredients

cooked chicken 4 cups, shredded
broccoli florets 4 cups, lightly steamed
cream cheese 8 oz (225g), softened
sour cream 1 cup
heavy cream 1/2 cup
garlic powder 1 teaspoon
onion powder 1/2 teaspoon
dried thyme 1/2 teaspoon
salt to taste
black pepper to taste
shredded cheese 2 cups, low-carb variety (e.g., cheddar, mozzarella, or a blend)

Preparation

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the softened cream cheese, sour cream, heavy cream, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well until smooth.
  3. Add the shredded chicken and steamed broccoli florets to the cream cheese mixture. Stir to combine.
  4. Transfer the chicken and broccoli mixture to a 9x13-inch (23x33 cm) baking dish, spreading it out evenly.
  5. Sprinkle the shredded cheese evenly over the top of the casserole.
  6. Bake for 25-30 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
