Place each chicken breast between two pieces of parchment paper or plastic wrap and pound them with a meat mallet until they are about 1/4 inch thick.
Season the chicken breasts with salt and pepper.
Place the coconut flour in a shallow bowl.
In a separate bowl, beat the eggs.
In another shallow bowl, combine the Parmesan cheese, mozzarella cheese, garlic powder, and oregano.
Dip each chicken breast into the coconut flour, then into the beaten egg, and finally into the cheese and spice mixture, making sure they are well coated.
Heat some oil in a frying pan over medium-high heat.
Fry each chicken breast for about 2-3 minutes on each side or until golden brown.
Once the chicken is done frying, transfer it to a baking dish.
Pour the tomato sauce over the chicken, making sure it is fully covered.
Sprinkle some more mozzarella cheese on top of the chicken.
Bake the chicken in the oven for about 10-15 minutes or until the cheese is melted and bubbly.
Once done, remove from the oven and let it rest for a few minutes.
