Ingredients
Old-fashioned rolled oats | 1 cup |
Black beans, drained and rinsed | 1 can (approximately 15 oz) |
Dates, pitted | ½ cup |
Plant-based vanilla protein powder | 4 scoops (about 60 grams of protein) |
100% cacao powder | ¼ cup |
Maple syrup | ¼ cup |
Aquafaba (reserved liquid from canned black beans) | ½ cup |
Vegan chocolate chips | Optional, for topping |
Preparation
- Preheat the oven to 350°F (175°C). Line a bread pan with parchment paper.
- Drain the black beans, reserving the aquafaba (bean liquid). Rinse the beans thoroughly.
- In a food processor, pulse the rolled oats until they are broken into smaller bits.
- Add the black beans and pitted dates to the food processor. Pulse until well combined.
- Add the protein powder, cacao powder, maple syrup, and half of the aquafaba to the mixture. Pulse to combine.
- Gradually add the remaining aquafaba as needed to achieve a thick, smooth batter.
- Transfer the mixture to the prepared bread pan, spreading it evenly.
- Optional: Sprinkle vegan chocolate chips on top.
- Bake for 20 minutes in the preheated oven.
- Remove from the oven and let it cool completely in the pan.
- Once cooled, lift the parchment paper to remove from the pan and cut into 8 equal bars.
- Enjoy immediately or store in an airtight container.
