Mediterranean Three-Bean Salad

Ingredients

Mixed beans (cannellini, kidney, and green lentils) 3 cups (cooked)
Extra-virgin olive oil 3 tablespoons
Red onion 1/2, finely diced
Fresh herbs (basil, oregano, and thyme) 1/3 cup (chopped)
Lemon juice 3 tablespoons
Garlic 2 cloves, minced
Sea salt and freshly ground black pepper To taste
Pine nuts 2 tablespoons, toasted
Cherry tomatoes 1 cup, halved

Preparation

  1. Combine beans, onion, herbs, and tomatoes in a large bowl.
  2. Whisk olive oil, lemon juice, garlic, salt, and pepper in a separate bowl.
  3. Pour dressing over bean mixture and toss gently.
  4. Refrigerate for 30 minutes to enhance flavors.
  5. Sprinkle with toasted pine nuts before serving.
