Herb-Infused Slow-Roasted Chickpeas

Ingredients

Dried chickpeas 1 pound (soaked overnight)
Garlic cloves 6 (crushed)
Fresh thyme 2 tablespoons (chopped)
Red onions 2 (sliced)
Extra-virgin olive oil 3 tablespoons
Lemon 1 (juice and zest)
Cumin 1 teaspoon

Preparation

  1. Preheat oven to 350°F (175°C).
  2. Simmer chickpeas for 20 minutes, drain.
  3. Mix chickpeas with garlic, thyme, onions, oil, cumin in baking dish.
  4. Cover, roast 2.5 hours. Uncover, roast 20 minutes more.
  5. Add lemon juice and zest before serving.
