Ingredients
Dried chickpeas | 1 pound (soaked overnight) |
Garlic cloves | 6 (crushed) |
Fresh thyme | 2 tablespoons (chopped) |
Red onions | 2 (sliced) |
Extra-virgin olive oil | 3 tablespoons |
Lemon | 1 (juice and zest) |
Cumin | 1 teaspoon |
Preparation
- Preheat oven to 350°F (175°C).
- Simmer chickpeas for 20 minutes, drain.
- Mix chickpeas with garlic, thyme, onions, oil, cumin in baking dish.
- Cover, roast 2.5 hours. Uncover, roast 20 minutes more.
- Add lemon juice and zest before serving.
