Mediterranean Quinoa Power Bowl

Ingredients

Quinoa 2 cups, cooked
Kale 2 cups, chopped
Sweet potato 1 cup, roasted and cubed
Chickpeas 1 cup, cooked
Bell peppers 1/2 cup, diced
Walnuts 1/4 cup, chopped
Pomegranate seeds 1/4 cup
Lemon-olive oil dressing 1/4 cup

Preparation

  1. Layer quinoa in bowls.
  2. Top with kale, sweet potato, chickpeas, and bell peppers.
  3. Garnish with walnuts and pomegranate seeds.
  4. Drizzle with lemon-olive oil dressing.
  5. Serve and mix well before eating.
