Mediterranean Legume Medley

Ingredients

Mixed dried legumes 2 cups
Sea salt 1 teaspoon
Ground cumin 2 teaspoons
Garlic 4 cloves, minced
Red onion 1, chopped
Thyme 2 sprigs
Smoked paprika 1 teaspoon
Fresh oregano 1 tablespoon
Extra virgin olive oil 3 tablespoons

Preparation

  1. Soak legumes overnight, rinse thoroughly.
  2. Heat oil, sauté onion and garlic until fragrant.
  3. Combine all ingredients in a large pot.
  4. Add 6 cups water, bring to a boil.
  5. Reduce heat, simmer 2-3 hours until tender.
  6. Remove thyme sprigs, adjust seasoning.
  7. Serve hot, drizzled with olive oil.
