Preparation
- Soak legumes overnight, rinse thoroughly.
- Heat oil, sauté onion and garlic until fragrant.
- Combine all ingredients in a large pot.
- Add 6 cups water, bring to a boil.
- Reduce heat, simmer 2-3 hours until tender.
- Remove thyme sprigs, adjust seasoning.
- Serve hot, drizzled with olive oil.
