Ingredients
Fava beans | 2 cups, cooked and peeled |
Ground flaxseed | 2 tablespoons mixed with 3 tablespoons water |
Garlic | 3 cloves, minced |
Chickpea flour | 1/4 cup |
Nutritional yeast | 2 tablespoons |
Dried thyme | 1 teaspoon |
Sea salt | 1/4 teaspoon |
Fresh parsley | 3 tablespoons, chopped |
Lemon juice | 1 tablespoon |
Cumin | 1/2 teaspoon |
Extra virgin olive oil | 2 teaspoons |
Preparation
- Preheat oven to 400°F (200°C).
- Blend fava beans until slightly chunky.
- Mix in flax egg and remaining ingredients.
- Form into small patties.
- Place on lined baking sheet.
- Bake 20-25 minutes, turning once.
- Serve warm.
