Mediterranean Fava Bean Fritters

Ingredients

Fava beans 2 cups, cooked and peeled
Ground flaxseed 2 tablespoons mixed with 3 tablespoons water
Garlic 3 cloves, minced
Chickpea flour 1/4 cup
Nutritional yeast 2 tablespoons
Dried thyme 1 teaspoon
Sea salt 1/4 teaspoon
Fresh parsley 3 tablespoons, chopped
Lemon juice 1 tablespoon
Cumin 1/2 teaspoon
Extra virgin olive oil 2 teaspoons

Preparation

  1. Preheat oven to 400°F (200°C).
  2. Blend fava beans until slightly chunky.
  3. Mix in flax egg and remaining ingredients.
  4. Form into small patties.
  5. Place on lined baking sheet.
  6. Bake 20-25 minutes, turning once.
  7. Serve warm.
