Mediterranean Chickpea Patties

Ingredients

Chickpeas 2 cups, cooked
Ground flaxseed 2 tablespoons mixed with 6 tablespoons water
Garlic 2 cloves, minced
Almond flour 1/3 cup
Hemp seeds 3 tablespoons
Cumin 1 teaspoon
Coriander 1 teaspoon
Smoked paprika 1/2 teaspoon
Sea salt 1/4 teaspoon
Black pepper 1/4 teaspoon
Olive oil 2 teaspoons

Preparation

  1. Heat oven to 375°F (190°C).
  2. Pulse chickpeas in processor until coarse.
  3. Mix in flax mixture, garlic, almond flour, hemp seeds, and spices.
  4. Shape into patties, brush with oil.
  5. Bake 15-20 minutes, flipping once.
  6. Serve immediately or store for later.
