Ancient Grain Corn Tortillas

Ingredients

Heirloom corn flour 2 cups
Chia seeds 2 tablespoons
Warm water 1½ cups (adjust as needed)
Pink Himalayan salt ¼ teaspoon

Preparation

  1. Combine corn flour, chia seeds, and salt.
  2. Gradually add warm water, mixing to form pliable dough.
  3. Rest dough, covered, for 15 minutes.
  4. Divide into 12 portions, shape into balls.
  5. Press each between parchment into 6-inch rounds.
  6. Cook on preheated cast-iron skillet, 90 seconds per side.
  7. Wrap in cloth to keep warm. Serve promptly.
